Stir Crazy?

Feeling a little cooped up? Don’t feel stir crazy, GET stir crazy…in the kitchen! Over the last couple of weeks, WE (yes we, my husband helped) have been cooking up a storm. At first, I wanted to clean out the fridge so we can make room for more fresh quarantine groceries. I also wanted to make sure I had plenty of items that if they did not get eaten right away, I could easily prepare them and freeze them if need be. The last thing I want to do right now (although it is my favorite thing to do…) is grocery shop and be amongst the people. This post is a bunch of stuff we have prepared and things that you can easily substitute and swap out with whatever you personally have on hand in your pantry and fridge. Have some fun in the kitchen and see what you can whip up. I bet you will be pleasantly surprised!

Let’s start off with a few recipes we made to clear out the fridge

Curry Chicken Salad
Curry Chicken Salad

First up to be eaten, curry chicken salad. I love to make chicken salads with leftover chicken or leftover rotisserie chicken. For this dish, I just made the curry chicken salad and simply served it over a bed of spinach and arugula. My husband wanted to use up the goat cheese so heck why not? I wouldn’t normally add cheese to a curry chicken salad but I must say, it tasted good! The goat cheese added an extra creamy element since I did not add too much mayonnaise to the dish.

For the curry chicken salad, I just mixed all my ingredients as follows to the taste that I prefer, you can omit or add as much as you want.

  • Chicken
  • Lemon Juice
  • Curry Powder
  • Red Onion
  • Celery
  • Mayonnaise or Greek Yogurt
  • Salt and Pepper
  • Golden Raisins
