Celery soup? Sounds boring, you’re not wrong. However, celery can be great! Especially in a soup, celery has tons of flavor when it’s cooked and is so good for you too. It is also perfect for a quick and super easy weeknight meal. I wanted something hearty and healthy for dinner tonight. My husband is traveling tomorrow so I wanted him to feel full but still good tomorrow with his busy day. I scavenged the fridge, found a surplus of celery ( I have a new love for juicing it, thanks Mel) and therefore, CELERY SOUP.

I promise, we can make this bland veggie taste great with very little!
Ingredients:
2 servings
1 Stalk (bunch) of celery thinly sliced
2 Carrots peeled and thinly sliced
1 Leek thinly sliced
1 Tablespoon butter + 1 Tablespoon Olive Oil
Pinch of Salt and 1/2 Teaspoon of Thyme
3 Cups of Vegetable or Chicken Broth
Easy Peasy Part
Melt the olive oil and butter in a stock or any other large pot
Add the celery, carrots, and leeks
Sauté the veggies until soft, about 5-10 mins depending on your knife cuts


Add a pinch of salt and dried thyme, fresh is better if you have it
Sauté a couple minutes more until you can smell the thyme
Add the broth and bring to a simmer for around 15 mins
Carefully pour into blender or use immersion blender to cream the soup
DONE
Tips:
It is always best to slice and dice everything before you start. I think it makes life so much easier to go down the recipe list and have everything prepped before you start cooking. You can just bang it out!
Leeks can be really hard to clean, I learned a tip from Ina Garten that has saved me SO much time. You chop the ends off the whole stalk and toss out. Then just slice the leek into thin slices and place in a large mixing bowl. Add cold water to the bowl of leeks until they are completely submerged. Let rest for a few mins and all the dirt will fall to the bottom of the bowl. Use your hands or slotted spoon to scoop out the squeaky clean leeks.
Additional Ideas:
This soup is basic. There is nothing wrong with that…It tastes great, it’s simple and easy to make, it’s filling, it’s healthy, blah, blah, blah…
That being said, it is SO versatile. You can substitute any of the veggies, use onions instead of leeks, add diced potatoes, white beans, or rice to thicken up the soup if you want it to be more viscose. Use fresh herbs if you have any on hand for a more robust flavor. I also love the idea of adding some parmesan cheese and heavy cream to make it extra indulgent or use water or cashew milk to keep it light. Add shredded chicken, top with your favorite soup toppings, and call it a day!
