Sometimes breakfast for breakfast is just not enough. I don’t know about you, but I could eat it all day long. So why not for dinner? I want something quick and delicious and breakfast is pretty much always quick and delicious.

The fun part about breakfast for dinner is that you can do a LOT with not a lot of ingredients. Most of us have plenty of breakfast staples on hand to insure a speedy amazing meal.

When I think of breakfast for dinner, I think ooey gooey, I think savory, I think sweet, and I think OMG I can’t wait to eat. My most recent rendezvous with BFD was cornbread waffles with crisp bacon and scallions mixed right into the batter with a fried egg on top. Alongside some roasted potatoes and more bacon of course. So:
Ooey gooey? check.
Savory? check.
Sweet? check!

I had extra waffle batter and in order to not get sick of eating cornbread waffles the following days, I threw blueberries with the batter in a mini muffin pan and baked some mini muffins, that’s a great money saving tip so we don’t waste anything!
I love leftovers but I love to repurpose them even more.

All I did for this recipe was use a box of cornbread mix. I followed their package directions to make the batter. I scooped out enough batter for 6 mini muffins for later use, and used the rest for dinner.

I added green onions and chopped up bacon to to the mix, and BOOM, you’re done. Heat up that waffle iron and get to cookin’. These were SO good on their own with that savory, salty bite but everything is even more amazing with an egg on top…

Breakfast is served, oops… Dinner is served!

Waffles are great for dinner because you can add whatever you want to them. Be sure to make plenty of extra because I am sure you have busy mornings and need a quick hearty dish. Pop your leftover waffles in the toaster or in the oven while you get ready for work 🙂 . Breakfast has endless possibilities! Having it for dinner makes it a little bit more whimsical. I don’t know about you but I am feeling a little western omelette WAFFLE sandwich….

Some other great ideas for BFD are;

  • Enchiladas, topped with eggs and guacamole
  • Breakfast pizza
  • Sheet pan Pancakes
  • Quiche served up with an arugula salad
  • Muffin pan egg bites
  • Steak and Eggs
  • A hash or scramble, use up all your extra veggies
  • Breakfast Kabobs
  • Any leftovers served over rice with fried eggs ( calentado)
  • Sandwiches, get creative!

Breakfast Empanadas

Alright, as if waffles weren’t enough…I over-indulged and also made some breakfast empanadas. I had lots of leftovers and wanted a fun way to eat them. I used pre-made pie crust as my empanada dough to save myself some stress, time, and much added effort.

All I did was preheat the oven to the pie crust package directions, cut out pie crust circles, stuff, egg wash, and BAKE!

From my waffle dish I had some left over roasted potatoes and chopped up bacon so I made a savory empanada with peppers, onions, bacon, and potatoes.

Empanadas or hand pies are a great idea for BFD or ANYTIME. I brought these to work as my lunch the next day. You can stuff them with anything and also make them savory or sweet.

Eggs, tater tots, and sausage? Yes, please! Use whatever veggie you have on hand, or whatever fruit or jelly you have…also works! Italian? Meatball and cheese, pizza stuffed, pepperoni, spinach, ricotta, and mozzarella…YUM! The list goes on. Stuff em and enjoy em!

Next up, the mini sweet empanada.

Of course there were two pie crusts to my package so we had a little savory, and we have a little sweet.
A favorite combo of mine is guava and cream cheese so guava and cream cheese empanada it is!

For this creation, all we did was use about 4 oz of softened cream cheese with a drop of vanilla and a tablespoon of cane sugar for the filling.
We mixed those together and placed on our cut out pie crust circles with a dollop of guava jelly.
After pinching the dough to seal them shut, we egg washed and topped with a sprinkle of sugar and baked according to the pie crust package.
